We'd still be the UK but the definition of what the UK stands for would have to be changed as we would be a united kingdom consisting of England, Wales, Northern Ireland but Scotland would still be part of the landmass of Great Britain.
Interestingly but going off on a bit of a tangent, I read a survey somewhere revealed that a greater percentage of the English population were in favour of Scottish independence than that of the Scottish population. Perhaps those south of the border should also participate in the referendum.
